Quinoa Breakfast Bites- Turkey Sausage Omelet

As I am sure I have told you all, I am awful at mornings. I have the BEST intentions to wake up early, take my time getting ready, eat a good breakfast…and then my alarm goes off…and then my 7th alarm goes off…and then after I hit snooze and finally wake up at 7:30…I have 15 minutes to leave for work and get there by 8am RIGHT on the dot. You know, so I need something quick to grab before I head out the door and easy to eat at my desk.

I have no problem with a good fruit smoothie, some yogurt and granola, or some cottage cheese, but sometimes I want just a bit more. So these were made last night and I just warmed up 5 of them in the microwave for a super filling, protein-packed breakfast with low calories, of course!

Quinoa Breakfast Bites- Turkey Sausage Omelet

Ingredients
2 c. Cooked Quinoa (1/2 c. uncooked, 310 calories)
1 c. Egg Beaters (120 cal)
2 eggs (140 cal)
1/2 c. Turkey Sausage Crumbles (I love these, by the way!!!, 70 cal)
1/2 c. Shredded Fat Free Mozzarella Cheese (100 cal)
1/2 Green Pepper (10 cal)
1/8 c. Chopped Onion (8 cal)
1 1/2 Frank’s Red Hot Sauce
1/4 t. Garlic Salt
1/4 t. Black Pepper
Other Seasonings to taste.

Directions
1. Preheat oven to 350 degrees & spray mini-muffin pan with non-stick spray.
2. Mix eggs & egg beaters in large bowl. Combine (cooked) Quinoa and all the rest of the ingredients.
3. Spoon into mini-muffin pans.
4. Cook 20-30 minutes, or until tops are golden brown and cooked all the way through.

My batch made 33 mini muffins, which made each bite 23 calories. (5 bites=115 calories and plenty to fill me up for breakfast!) I served mine with Frank’s Red Hot Sauce, but they would be good with salsa too!!
