HAPPY TACO TUESDAY! Can we even call it Taco Tuesday if we don’t top it off with Guacamole? I made a delicious chunky guacamole, my go-to recipe, and figured it was time to share. If you’re a long-time reader, you may remember that I shared an easy guacamole recipe. If you don’t want to fuss with the “chunkiness” or prefer a more smooth guacamole recipe, check out the older version. The one photo there is iPhone 4 quality, but the recipe is muy bueno!
Now, if you really like a fresh, bright, chunky guacamole, this one is PERFECT. I love eating this on a hearty tortilla chip like the Trader Joe’s Organic Stone Ground Blue Corn Tortilla Chips with Sprouted Amaranth, Quinoa & Chia Seeds. For a low carb option, I have been eating this on top of a Taco Meatball salad drizzled with a little olive oil and salsa!

- 2 Avocados
- 1/4 c Chopped Cilantro
- 1/4 c Chopped Red Onion
- 1/4-1/2 c Diced Grape Tomatoes
- Juice from 1/2 lime (or more to taste)
- 1 T Cumin
- 1/2 T Granulated Garlic
- Heavily Salt & Pepper to Taste
- Mash avocado with fork.
- Combine all other ingredients.
- Serve with chips, on tacos, salads, sandwiches and more!
