SCHOOL CAFETERIA BREAKFAST PIZZA BAGELS

After months of having scrambled eggs alone for breakfast, I decided to mix things up for meals. I ventured into breakfast burritos, breakfast sandwiches, and now breakfast pizza bagels- all easy to freeze and reheat throughout the week for quick breakfasts on the go.

These breakfast pizza bagels are almost as good as I remember from my school cafeteria days! I was craving them so badly, so I searched the internet and REALLY didn’t find a good recipe for them. (Cough, pregnancy makes you want weird things for no reason, cough!) I decided to try my hand at making these delicious treats myself!

 

At first, I tried to make them with white gravy (from a packet) as the sauce, then crumbled sausage, topped with mozzarella. They were good, but not quite as CREAMY as I had envisioned. This time around, I decided to whip up some sausage gravy like you would put on a biscuit and layered that on the bagel, then topped with mozzarella. They ended up being as creamy as I imagined, and I figured I would share this goodness for you all to try!

BAGEL BREAKFAST PIZZAS

Ingredients
1 lb. pork (or turkey) sausage
.25 c flour
2.5 c milk
Salt, pepper, & crushed red pepper to taste
1 pack of bagels (I used a pack of mini bagels)
8 oz mozzarella cheese (shredded)
 
Directions
1. Preheat oven to 350 degrees.
2. Cook tube of sausage on medium heat, breaking apart into small pieces. (Add in crushed red pepper at this time if you want additional heat.)
3. Once cooked through, add flour and mix.
4. Slowly incorporate milk and mix. The gravy will begin to thicken as it cooks. (Around 5 min.)
5. Add in salt & pepper to taste. (I add in A LOT of pepper for mine, but if I make for my husband, I cut back some.)
6. Separate the gravy onto all the bagel halves equally.
7. Top with a sprinkle of shredded mozzarella cheese.
8. Bake on a lined baking sheet for around 8 minutes. (Depending on your oven. Bake until cheese is melted and bagels aren’t burnt!)
 
Freezing instructions
If you are freezing, let the bagels cool completely, then layer in freezer bag or container with wax paper. These don’t last long in our house, but would probably be fine for 3-4 months! We like to set them out in the night then cook for about 1 min in the microwave to serve.

  1. What a yummy idea! I like that you used mini bagels as well! Also, how come my high school cafeteria never had breakfast bagels? All we had were rubbery french toast sticks! I may just have to try this Britt! Thanks for sharing!
