Caramel Apple Pie Bread Pudding

Ingredients

Bread Pudding

  • 5-6 c bread use any on hand, cut into 1-2" cubes
  • 3/4 c brown sugar
  • 3/4 c milk
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 peeled, thinly sliced and chopped apples

Caramel Sauce

  • 1/2 c brown sugar for caramel sauce
  • 1/4 c half & half for caramel sauce
  • 2 tbsp butter for caramel sauce
  • 1 pinch salt for caramel sauce
  • 1/2 tsp vanilla extract for caramel sauce

Instructions

  • Preheat the oven to 350F. Chop up your bread into 1-2" cubes.
  • In a large mixing bowl, mix together brown sugar, milk, eggs, vanilla, and cinnamon.
  • Add cubed bread to bowl. Mix well, then let it sit to soak up the custard mix for 1 hour. Stir occasionally.
  • While the bread soaks up the custard, you can make your caramel sauce. Add the brown sugar, half and half, butter, salt, and vanilla to the sauce pan and cook on medium, whisking often, on medium low for 5-6 minutes. Set aside.
  • After the hour is up, mix in the apples to the bread pudding mix. Transfer to a greased 9X9 baking dish.
  • Bake for 35-45 minutes. To check for doneness, the edges should be brown and the middle should not be "soupy." The custard should be cooked into the bread pieces.
  • Pour caramel sauce over the top, serve with fresh whip cream or ice cream on top!

Notes

Make sure your apple slices are VERY thin so they cook through when they are baked. You can use basically any fruit in this recipe! Peaches or pineapple would be especially good! If you happen to have some candied pecans or walnuts on hand, those would add a great texture to this dish as a topper!
