As I am sure I have told you all, I am awful at mornings. I have the BEST intentions to wake up early, take my time getting ready, eat a good breakfast…and then my alarm goes off…and then my 7th alarm goes off…and then after I hit snooze and finally wake up at 7:30…I have 15 minutes to leave for work and get there by 8am RIGHT on the dot. This is my favorite lately. Ask my friends that have lunch with me daily, or my boyfriend that is with me when I’m eating dinner most nights…I eat it like, all the time. I’m a meat girl. I love chicken and especially steak. This is a beef recipe. No one ever thinks of BEEF when they are dieting, but I think that as long as you are watching your intake and you make sure to get lean cuts…it’s just fine! I’m obsessed with my crockpot. I use it more than I use my oven. With my new healthy lifestyle, I’ve been very strategic in my meal planning. So I was at the grocery store and saw that turkeys were on sale. I thought to myself, “Hmm…I’d love to make a turkey…I never have!” And that’s when I saw an all white meat turkey breast. BINGO! Perfect. So on Saturday night, I set it out and let it thaw, seasoned it and popped it in the crockpot to bake all Sunday. Then I sliced it up and make 6 lunches all under 400 calories and so yummy!
